Paleo & Vegan Nutrient Dense Coconut Probiotic Ice Cream & Popsicles

IMG_20150808_190228Who doesn’t love popsicles? These Nutrient Dense Coconut Probiotic popsicles you are about to discover are a marriage between two of my favorite treats; cocadas (a Venezuelan drink) and coconut macaroons (a favorite shredded coconut meat treat I enjoyed growing up). Both are loaded with sugar and terribly unhealthy. I created this popsicle recipe about 6 years ago as I was developing healthy gluten and sugar-free treats for our family reminiscent of my childhood.

Realizing that many adults and children deal with mineral and vitamin deficiencies, I wanted to make a nutrient dense treat that would satisfy a sweet craving but offer fiber, protein, healthy fats and a host of vitamins and minerals.

Enter sprouted, raw pumpkin and sesame seeds! These babies are a powerhouse of nutrients because the sprouting process preserves temperature-sensitive enzymes and nutrients. Proper sprouting also makes these seeds more digestible.

Little Nutritional Facts:
Pumpkin seeds contain high levels of magnesium, manganese, phosphorous and provide good amounts of potassium, iron and zinc. They also are a good source of protein. Sunflower seeds aren’t far behind. A small amount each day provides a great way to ingest essential fatty acids, copper, selenium, phosphorus manganese, magnesium, vitamin E, B1 and B5. They are also high in protein.

One of my frustrations with many organic, grain and gluten-free products on the market is that they are void of nutrients and high in sugar. I don’t care if its organic sugar, it is still sugar and it can still feed cancerous cells and opportunistic gut organisms like candida. But not dese babies, nope, just pure healthy goodness here. No junk, no fillers.

To make my Nutrient Dense Coconut Probiotic popsicles you will need:

Popsicle molds
– blender
– 1 cup of fresh coconut meat or ¾ cup shredded coconut
– 1 can of full fat coconut milk without additives or 13 ounces of homemade coconut milk
– ¼ cup sprouted sunflower seeds – these are my favorite
– ¼ cup sprouted pumpkin seeds – these are my favorite
– 2 tablespoons of ground cinnamon – 2 tablespoons of Probiotic powder or 1-3 capsules of your favorite probiotic

**OPTIONAL** If you like things to be sweet – Add in 3 tablespoons of raw Manuka honey, maple syrup or coconut sugar

Add all your ingredients to the blender and blend until smooth. In my manly Vitamix this takes about 30-45 seconds. Less powerful blenders might take about 1-2 minutes. Once blended pour mixture into molds and freeze for at least 8 hours or overnight.

You can also add in homemade vegan caramel to the mixture, raw cacao syrup or fruit. Just go with it. Be inspired to make something beautiful.

Place any remaining mixture inside a bowl and freeze for 2 hours to enjoy as ice cream, be careful not to freeze the extra mixture for more than 1-2 hours or it will turn rock hard.
