Cooking for me is like dancing or signing.
The mixture of rhythmic movement back and forth,
the beauty of the untold recipe,
the gift of discovering, blending, making a sweet mess,
licking your fingers, jamming in your PJ’s
and discovering that cooking healthy does not have to be a drag.
I don’t know about you but for me, making new delicious healthy meals is invigorating and theraputic.
There is something about knowing that you are investing in the health and longevity of others that inspires me to try new things, play with new ingredients and be free in my kitchen.
So tonight was one of those nights. I was craving for a sweet treat but like most crazy weekends in our home I was out of everything. I mean I was lucky to have some organic over ripe bananas that I cut and froze the day before. I also had a little almond milk and that was enough to inspire me. But wait what was that little bag in my pantry? Oh man, I can’t believe it. I found some organic raw walnuts right next to my bag of raw flaxseed powder.
Now we are cooking baby! Mamma’s gonna get her sweet tooth fix tonight! Can I get an Amen, lol.
And now the magic begins.
This is what I had on hand; therefor this is my recipe.
Now before I continue let me inspire you to NEVER EVER get discouraged because you don’t have everything a recipe calls for. Make it a surprise, venture out into the unknown world of flavors and make something beautiful.
I can’t say how many times I have been making a Thanksgiving dinner and messed up dreadfully only to fix things with maple syrup or raw honey, lolol. The best thing about cooking is learning to be free in the kitchen. I may glance at a recipe but in the end it will have my crazy and colorful taste all over it. What does that mean?
Well it means my barbeque chicken gets a dash of curry and my sweet potato pie gets chocolate chips.
You catching my drift?
Okay now for the ingredients (they are all organic)
– 2 ripe frozen bananas (peel and cut then store in natural wax paper inside the freezer for 24 hours)
– 1/3 cup of almond milk
– 2 tablespoons of chopped walnuts
– 1 teaspoon of flax seeds
– 2 tablespoons of pure maple syrup
– a pinch of nutmeg
– 1/2 teaspoon of pure vanilla extract
To make this delicious delight blend all the ingredients together in a manly blender, lol. I mean in a Vitamix or other high powered blender. Blend until it’s nice and creamy.
Scoop into a fancy bowl, goblet or wooden dish and enjoy with dried fruit or homemade grain free granola.
You can also put some shredded coconut, hemp seeds or raw nuts on top to add to the protein content!
And that is how you make a vegan, gluten and dairy free ice-cream.
