I often get emails asking me how I got into health and wellness, herbal medicine and crafting organic products. So here is a little bit about LCO and some of the services I offer.
My passion for health and helping people started from when I was a little girl. I always enjoyed making teas, working with plants, planting, harvesting and being covered in dirt. LOL
Part of my journey began almost 10 years ago when my firstborn was diagnosed with severe asthma and allergies and ended up in a hospital for 6 weeks and then underwent a surgery. He was not even 2 at the time.
I had exhausted all my efforts to keep him healthy and he was on over 5 meds a day and took many antibiotics just in his first year of life. Deep down inside, I knew something was wrong with the amount of medicines he was taking; I knew that doing breathing treatments every 4 hours for weeks was not the answer. So I started to delve deep into research and into my past. A past of herbs, natural foods and living alongside nature. Once armed with the courage, inspiration and determination, I started to do my own case studies on my son and our world was changed forever with what I found out. During this process I could not help but remember as a little girl being told to run out into the garden to cut oregano, peppermint and any other herb that was to be used in my grandma’s kitchen. This thought remained in the back of my head for many years.
After my awakening regarding my son’s health I was on a mission to go back to eating healthier things. Not just for him but for me too. You see there is a story I am not telling you here about a painful condition I had a few yrs before my son was born that required surgery but I did a fruit and vegetable fast for about 6 months and started making little changes and this issue along with my severe constipation cleared up. My perils led me to become a health and wellness research specialist.
Little by little I was beginning to see all the nasty secrets of the pharmaceutical industry, our health system and the overall medical approach regarding health. My studies led me to discover the truth behind toxic chemicals in food, infant formula, makeup, sanitary napkins, clothes, baby wash, nail polish, antibiotics, cosmetics and everything in between.
During this time I also discovered that nutrient based therapy for many diseases is safe, effective and inexpensive. But that’s the whole point! It’s so good and so easy to use nature for healing that it makes NO $$$ for Big Pharma and medical professionals, so you will most likely not hear about it from your doctor. You can’t patent nature, God created everything in nature and he holds the only patent! So because you cant patent nature, most health care professionals wont bother with nature alternatives!
In discovering these truths I was shocked, appalled, disgusted and saddened. I knew I had to do something……that something evolved into La Chica Organica and later into making my own line of facial cleansers, organic herbal tea mixes, healing balms, salves, diaper rash creams, herbal baths and more. After all I started making them out of love for my own family to ensure we were getting the very best organic products.
Everything I teach people to make and those things that I make myself are all with one thought in mind: “If I can’t use them for our children then it’s not good for anyone else”.
That is why my commitment to health is of utmost importance to me; so I make sure that La Chica Organica’s herbal creations DO NOT CONTAIN petro-chemicals, sodium lauryl sulfate, formaldehyde, mineral oils, parabens, PABA, pesticides, fungicides, herbicides and synthetic fillers.
Making quality non toxic creations using all that God blessed the earth with, and educating people about natural solutions is essential to me because I never forgot my days as a little girl cutting herbs and pulling up potatoes while walking barefoot in the yard. That little girl became one of the most important aspects of La Chica Organica’s mission. Why? Well because that little girl represents all of us in our quest for a healthier and safer life. She is one of the reasons for why I do what I do.
That little girl can also be seen in the faces of thousands of poverty-stricken children around the world that die each day because of a lack of proper nutrition and knowledge of natural treatments. My desire is to equip people with life saving knowledge so that they can go out into the world and lead healthier happier lives and impact those that are suffering around them. If I can’t use my life experiences to help others then whats the point of going through hard times? In my lifetime and the life of my extended family I have encountered: cancer, arthritis, ADHD, asthma, allergies, black mold, chronic infections, irritable bowel syndrome, GERD, diverticulitis, back injuries, disability, high blood pressure, constipation, burns, excema, psoriasis, chronic diaper rashes, parasites, depression, nursing, child-birth, multiple childhood illnesses, high fevers, hormonal issues, bad breath, anemia, bone loss, periodontal disease and many other issues to long to place here.
So, as I have gone through life and dealt with various health issues in my family and extended family I have sought to learn as much as I can about them and use all that God created to aid us in recovery and prevention.
But sharing all of this with you would not be complete if I did not mention who was responsible for awakening my curiosity for natural cures, organic foods and herbs. That would be my dear Papi, my dad who is probably strolling in a heavenly vineyard or dancing with the angels. My dad was taken from us because of medical malpractice, but his love, and teachings are alive and etched inside my heart. Dad, I know you would be proud!
It’s not easy, going through life altering events like loosing a loved one or battling with cancer. My life has been full of hard times, good times and suffering, but I have found that if we survive with grace and faith we can share with others what we learned and make the world a better place. That is what I strive to do with each class I teach, with each product I make and with each article I write.
It saddens me when I see people who claim to be health gurus and experts but they have no love for people. Some of them are new to health & wellness but they lie claiming to have years and years of experience, all in an effort to build a deceptive business and take your money.
LCO is not one of those people. Being a health advocate is something I take very seriously, whether it is making an organic diaper rash balm or teaching people about healthier eating. All is the same to me. My motto is that we should live our life everyday as a gift and then give that gift away everyday. My passion for health is my gift, and that gift I give away to you and to others every single day!
And just for fun, the name La Chica Organica™ started as a joke from my husband when we were still dating. In English it means The Organic Chic. He and many of our friends know that in most cases if it’s not Organic and healthy I don’t want it, although I sometimes find my self having to make wise non organic choices, like when the family goes out to eat Greek Food or when we are visiting friends who don’t share my passion for wholesome organic food, but ultimately I pay the price with an upset stomach or some other irritating symptom. So I try to steer clear away from bad food unless it’s the only option and starvation does not win by popular vote. LOL (Laughing out Loud)

The Twelve Degrees of Silence

Today a catholic co-worker shared this inspiring reading with us. One does not have to Catholic (as in my case) to be blessed and inspired by the message here. Given the craziness of our days as busy human beings working to make it through each day and often missing the little things in life, I thought this reading was an appropriate reminder that we should take time out for silence.
The twelve degrees of Silence
Silence is the profound activity of attentive love. If spiritual life calls us progressively to silence around and within us, it is to make us enter into God’s own Being where a constant dialogue of love is experienced between the Father and Jesus, his beloved Son. Silence, therefore, becomes a way of attaining this goal, a tool that facilitates our entry, a road that purifies us. There is what we call « the asceticism of silence ». To be silent is not something easy. There are obstacles outside as well as within us. Even if silence is precious to monastic life, we must tame it first of all in our daily lives, make it part of our being, choose it and maintain it with efforts and perseverance. For if we seek to establish our dwelling in God, we must realize that God establishes His dwelling within us. Silence, therefore, becomes an encounter between God and ourselves. It is also a journey within ourselves that purifies our being by uniting it with God.
Sister Marie-Aimée of Jesus, a Carmelite from Paris, understood the role of interior silence that she divided into twelve degrees, in parallel with the twelve degrees of humility in the Rule of St. Benedict. Let us enumerate them and comment each one briefly :
1. Silence of the word
2. Silence of movements or action
3. Silence of the imagination
4. Silence of the memory
5. Silence to the creatures
6. Silence of the heart or of feelings
7. Silence of humility or self-love
8. Silence of the spirit or of intelligence
9. Silence of judgment
10. Silence of the will
11. Silence with one’s self
12. Silence with God
Silence of the word « The persons who really say something are not very numerous; those who listen are scarcer still. All words are vain when they are not ripened within ourselves with Love’s consent. » Maurice Zundel In our era of communication, we are asking ourselves if we are not saturated with words. In order that a word be meaningful, it must gush forth from our inner depths to be received in the deep regions of another person. If we are already filled with an abundance of words, won’t a creative word fall by the wayside of our heart and be easily forgotten, ignored or misunderstood? To be silent in words allows us to be open to the Word of the Father, Jesus: Word of Life, of Truth and of Freedom.
The Silence of action To pause in order to better understand the meaning of our actions; to avoid being submerged and distracted by an abundance of things to do; to discern our motivations hidden in our activities and to know how to choose what is essential. For the danger is always there to let ourselves be carried away by our precipitation and neglect love. The frenzy of the present moment hides us from a profound and free awareness of the meaning of life, by making us « surf » on the wave of our being. The silence of action allows us to discern where God wants us now for the good of our surroundings and of society. For the monk, the silence of action is also an awareness of ones actions, it is living the present moment which contributes to ones inner calm and to the silence of the monastery by making as little noise as possible.
The Silence of the imagination In a world where dreams, the unreal, cyberspace proliferate in abundance, the influence of ones imagination is strong. Marketing often uses human aspirations to happiness to make us imagine and dream about things. But the fondations suggested for this kind of happiness are often too materialistic and temporal; this does not satisfy the human heart aspiring for the infinite. To create the silence of the imagination is to take root in the reality of our lives. Yes, we need aspirations to make us move forth; but they must be founded on reality and on the deep meaning of human values. Our imagination can become a refuge to escape existential emptiness. When it is purified and free, the imagination can become the source of great creativity, in the image of God’s own creativeness. To create the universe, God needed a lot of imagination; to build a just and fraternal world, we also need a lot of the same.
The Silence of the memory The memory : indispensable faculty for the continuity of existence! Without it, we would have to learn over and over again how to dress, wash, brush our teeth, walk, etc… Thanks to our memory, we can use all these daily activities and advance in other learning processes. Memory is very much related to intelligence; it conserves and recalls the meaning of our lives. It keeps watch over the unity and continuity of our past, our present and our future. Memory is also a faculty that forgets and that is a good thing. Among all the words we hear, all the experiences we go through, all that goes on around us, it knows how to discern what we must keep. But it discards some things for we would be submerged by too much information that would be more confusing than helpful. The memory also needs the imagination in order to remember. To cause the memory to be silent allows us to remember our moments with God and to conserve the graces. We must practice in leaving the history of God take over our own.
The Silence to the creatures How much time do we take in conversing interiorly either with others or with ourselves? After an encounter, we often rerun it as a « film » in our heads; and if there is something we have not said, we add it to the scenario or we remove what we did not like. This is a good example of the use we make of our memory and of our imagination. We use it as much for an encounter that already took place, therefore in the past, as for an encounter to come, therefore in the future. This can be useful either for integration or to prepare us, but if we spend too much time on it, we forget to live in the present. It is sometimes useful to silence these interior conversations if they make us go around in circles.
The Silence of the heart or of feelings The heart is a place where all types of emotions reside. It is also the place where desire takes root, where love flows like a source. The heart is filled with affections and tenderness. It is the community centre of our being. To silence our heart allows us to purify ourselves of all unhealthy attachments. That is, those that make us prisoners and close us on ourselves. The heart is extremely sensitive and deep, almost « bottomless ». If we do not keep an eye on it, we can be led blindly into traps that can injure us instead of helping us mature. The deepest desire of the heart is one of recognition of our human dignity. When we have value in the eyes of others, our existence finds meaning and fulfilment. Since our existence finds its beginning in the heart of God the Father, only his love can fully quench our thurst of finding our meaning in life. It is then important to receive from him our dignity.
The Silence of humility and of self love We all need to be « proud » of ourselves; to feel personal satisfaction following an accomplishment. This « interior contentment » builds up self esteem and self confidence, by becoming aware of our capacities, our possibilities, our strengths. But if we continually await this recognition from others, if we use our talents to obtain admiration, consideration or praise, this fosters self love. We become more concentrated on what we receive than on what we give. And this prevents us from really opening up to others. On the contrary : it weakens our being instead of opening it up and allowing it to grow. We must accept our limitations, our impotence and sometimes even our misery. It is part of our make up. Saint Theresa of the Infant Jesus used to say : « Humility is being lovely aware of our misery. » When we realize that we are loved in spite of our weaknesses, sadness or the discouragement felt at seeing our dark areas, everything is transformed into light and interior freedom. We take ourselves less seriously and become all the more merciful.
The Silence of the spirit or of intelligence A human being is defined by his intelligence, his ability to think, to reflect, to reason. And intelligence is defined by the ability to know and to understand. « Who has directed the spirit of the Lord or has instructed him as his counselor? » (Is 40,3). God surpasses out intelligence, His grandeur goes beyond our reasonings.
At a certain moment during our journey in faith, the intelligence falls into a profound silence. It recognizes that it has reached the end of what it can know about God through ideas and concepts. During this period, the intelligence accepts to receive a much deeper knowledge acquired through experiencing the love of God, for example, through daily life. The idea or concept of God’s love incarnates itself in many countless ways. The role of the intelligence is then transformed into identifing or recognizing God’s manifestations. And most often the enlightenment is provided from God himself for it is of spiritual matter.
The Silence of judgment The judgment is an act of the intelligence. But quite often, we judge causes and persons in an unintelligent manner. Today, it is a journalistic fashion to ask everyone and anyone their opinion on different topics. Are we really capable of answering these questions, often beyond our daily reality and capacity to truly know what they entail? The foundation of judgment is truth and God himself is Truth. Outside of him, our judgments are incomplete, for what we see of reality is incomplete. To silence our judgment is to accept that we are not able to grasp all the truth of what is asked and to accept that God alone is able to judge « correctly » for the good of all. That is why the attribute « righteousness » is acquainted to « justice ».
The Silence of the will If intelligence seeks « truth », the will seeks what is « good ». We all search for happiness, pursuing it in all our actions without giving it any thought. The will is like a motor. As long as it does not seek the « Supreme Good » that is God, the will remains prisoner of temporal attractions. The more our will desires the « good » that God wants for us, the more it becomes free. This freedom is acquired through successive detachments of what is not conform to God’s Will, which at times can be quite painful. But when we understand that God’s Will is motivated by his love for us, conforming ourselves to his Will becomes much more easier. A time comes when a single attitude silences our own will : a holy abandonment letting aside all the ifs, buts or whys. All this is the work of interior obedience. It is a question of the will giving in, allowing itself to be purified by exterior and interior trials in order to allow oneself to be united with the heart of God, wanting what He wants. In other words, unite our « two » wills into ONE; it is the principle motive of love.
The Silence with one’s self There are stages in human life where we can sense that we are dying to something in order to open up to something new that is unsuspected. In spiritual life, it is the stage during which we become a grain of wheat sown in the earth and dying to one’s self in order to become the seed it contains. This stage is related to the Passion and death of Christ on the Cross containing already the signs of the Resurrection. The silence with one’s self is to forget ourselves, remaining completely alone with God. « The soul is simplified through progressive detachment of self and of all awareness of personal needs, of all attention to its present situation. God constantly draws it within and seperates it from all exterior objects. He gradually removes all consideration of itself and of what is happening to itself; to the point where it no longer knows how it is, no longer thinks about itself, is no longer preoccupied by it and carefully rejects all thoughts that would concern itself, in order that God may become its sole preoccupation. » Fr. Grou
The Silence with God The asceticism of silence normally attains the mysticism of silence. There is a correspondence of our work with the work of the Holy Spirit within us. It is only in complete silence that our being, in a kind of mysterious sleep, can receive God himself. Having no longer any obstacles to overcome, he communicates directly from his Heart to our heart through the flames of his Love. It is a real communion from heart to heart. To be silent with God is to be complacent in the beauty of his Being. It is giving our approval to his works, saying « yes » to his Will by the offering of ourselves to him and with him. When we have been detached from all senses, images, memories, activities of the intelligence, movements of the will, in brief, everything that is attached to the « ego », our being is simplified and can now nourish itself through the contemplation of God. A new world unwrappes itself to us, the key of accessibility being the capacity to listen to God’s Word speaking to us through his Son, Jesus Christ.

One of the things God blessed the earth with is my favored Peppermint.
Did you know that a type of peppermint has been found in Egyptian tombs dating from 1000 BC. It has been used for centuries for indigestion, colic, nausea, diarrhea, sore throat, toothaches, cramps, flatulence, acne, scabies, halitosis, neuralgia, fevers and ringworm; both as a tea and in aromatherapy treatments.
Peppermint’s medicinal properties include: analgesic, anti-inflamatory, antiseptic, antimicrobial, febrifuge, antiviral, antispasmodic.
We have used peppermint essential oil in our shampoo for many years to help with dry scalp and flakes. I feel Ugly and Fat & I’m Never Going to Look Like I Did Before! Thoughts from a Frustrated Girl!

My friend said this to me recently and I understand her completely. After all in my friend’s case, it’s not easy-going from a super lean size 4 to a not so lean size 14.
In my case I went from being a size 4 super lean and ripped mom to a size 10 not so lean and tired mom of three. As my friend said above I also felt that after having my 3rd child, I would never look like I did before . With the first two pregnancies I lost all my baby weight and an additional 15 pounds just within the first 4 months after giving birth. It was amazing, but I did work really hard on my physique including a 5 day a week gym workout consisting of two hours everyday of weights, strength training, cardio and toning.
But life changed really fast and I could no longer work out at all!!!! My doctor ordered me to go on bed rest for the last 3 months of my pregnancy and shortly after baby was born I fell at work because the building left soap and water on the floor. That further delayed my exercise since I could barely move enough to shower let alone do cardio and lift weights. I did several months of physical therapy and chiropractic and just recently have I been able to speed walk and do some light weights. Yet in spite of all that happened to me I sometimes felt like I was never going to be that hot chick my husband knew just 2 years ago.
I mean really. Between diaper changes, constant breastfeeding, working fulltime and other children to care for; who in their right mind has the time to work on their abs for 45 minutes 3 times a week and do strength training 4 times a week? This depressed me because I am one of those people who absolutely adores the gym. I don’t need encouragement to go, no workout buddy needed. Just give me the time and a babysitter and I’m there at whatever time.
So like I told my good friend, I had to give it to God and realize that there was a little creature that had the right to demand all of my time, energy, milk and sleep. And he still does at 15 months and I am still working fulltime and I still have not made it into the gym. I will get there soon just not right now. In the meantime I have opted for strolls with the kids, weight training at home (free weights) and have accepted the fact that perfection is not a requirement for loving or receiving love.
My kids and my husband don’t look at me and say “Jeez mom, I would love you a whole lot more if you dropped those last 7 pounds”
Going through this season of fattyness has further reinforced my belief that we don’t control our world or what happens to us, only God does. I can’t wake up and tell a pregnant contracting tummy to stop contracting because I am in control.
I can’t tell a sickness to leave or tell a pimple to go away or stop a freak accident from occurring.
I can, however, chose to continue living my life as a gift and savor the taste of my homemade organic rose petal honey on freshly made bread.
I can set my weekly goals and do my best to meet them, but when I don’t I can rest in the fact that I’m not perfect and proceed to dancing with baby on my hip as a cardio workout substitute.
I can ignore fashion week and say firmy that it bares little to no weight on what I decide to wear or not wear!!!
I can make healthier decisions about how I am eating and not blame myself for packing on a few extra pounds when those pounds were part of “a labor of love”
I can encourage others around me to be healthier and teach them what eating right looks like.
There is so much to be thankful for and little to complain about. After all there is a solution to everything on this earth except for death.
So at the end of the day don’t sink into the thought of feeling ugly and fat if this is the result of an unexpected life change or illness.
Make the best of your day. Like I say to my kids: You can get all dressed up for an event and go out to then get caught in the rain and finally make it into the car soaking wet. Once in your car you can freak out and be in a bad mood or you can get out of your car, and dance in the rain. Either way you’ll still be wet, the only difference is the attitude you choose to have.

Are You Doing Your Part?

I can’t imagine my 3 defenseless, innocent children fending for themselves in a dark alley, under a bridge or amongst a pile of garbage looking for a bite to eat. Yet every single day millions of children are in that situation. Some have been abandoned, some have lost their parents and some have escaped abuse. These children are often not the topic you talk about when you are gathered with friends or family. For most people, it’s not the main conversation during Thanksgiving dinner.
We may not speak of them but they are there.
So what are you doing about it? Are you doing your part?
Think for a moment if it was your baby boy with a high fever and a rash all over their body. There is nothing to help him and the fever is only getting worse. You struggle to breathe as you lay on a dirt floor covered in sweat and holding your precious child. You cry out to God and begin to weep as you see your little baby slipping away into eternity. The minutes seem like hours and as you place your head on theirs and wipe their tears as they have mixed with yours, you notice they are no longer breathing. It’s all over.
I don’t know about you but that thought rips through my gut. I can’t help but cry as I see the pictures above. I can’t help but think what if I was born into that poverty and did not ask to be there?
In my travels with my father we did see a lot of poverty. Children begging in the streets and carrying little siblings on their back. I was a child back then and it just seemed normal because we were surrounded by it. As I grew up, the reality of poverty really struck me. I watched my father create projects to help very poor families in his country. Throughout the years, seeing the need has made a gaping hole in my heart and has prompted me to be an advocate for such misery. Over the past few years I have been working directly with some international missions and have had the opportunity to bless very needy children with some of my Organic herbal creations. I will be calling on you in the future to help me as this beautiful plan unfolds so stay tuned.
But for now I want to ask you again. Are you doing your part? Just think about it for a moment and as you go about your day think if there is something you can do to help someone who is less fortunate.
That’s all for today. I want to leave you with a poem I wrote last year on Poverty. May it touch your heart and move you to action. So together we can all make a difference in someone’s life, even if it’s just one person.

What is poverty?
Who can dare define its limits and beginnings? Where does it sleep at night?
Am I poverty, are you?
Who can tell at a mere glance the poverty that lies within a child who has never felt the affection of a parent they live with?
Who can hear the unspoken cries of the many souls that surround us?
Souls that are thirsty for peace for love for food and clothing.
Do you pass poverty by when you come to work?
Do you stop to ponder that poverty might just be looking at you when you’re at church or at the mall or in your own home?
Again I ask you, what is poverty? What is it really?
Is poverty defined only by those suffering in far away nations or can poverty be tucked away in your own heart.
Is poverty taught?
Is it learned?
Do you teach poverty when you walk away from a poor desperate soul in need.
Do you learn poverty when you’re sinking in despair and the people at church don’t offer you solace just a scripture for you to take along in your misery?
Can you hear poverty ringing in your ears? Do you recognize it when you see it?
Do you know that when a person is lost and hopeless they too are suffering from poverty, and when a neighbor decides to take his life he too is suffering from poverty. A poverty of Love
When innocent people are killed in the name of peace and rallies are conducted to promote murdering the unborn, such people are also suffering from poverty. A poverty of spirit.
When moms and dads can no longer provide for their children and they cry out to their church and their community, but their cries are stifled by blueprints for new buildings and better parks.
Such moms and dads are victims of those suffering from poverty. A Poverty of Compassion
When jobs are lost and good health is removed from someone you know. You say you’ll pray for them and leave while your bank account accrues interest for that vacation you really don’t need to take again. You too are suffering from poverty. A poverty of selflessness
When you neglect your children by putting your dreams ahead of theirs and family time is no longer entertained because there is no time and there are many things to get done. You too are suffering from Poverty. A Poverty of Sacrifice
So again
I ask:
What is Poverty to you?
Will you for one moment stop and think that God may just be bringing people and circumstances your way as a reminder of what true love is really about.
Will you do something about Poverty today or will you just turn your back and walk away.
