The Coconut Water Miracle

There aren’t many products in this world that:
Replenish electrolytes
Regulate blood sugar levels
Help lose weight
Taste great
Are fat free
Cholesterol-free
Low calorie
Are non toxic and without side effects
Recently I started drinking about 50 to 70 ounces of coconut water every day. I started this to help me with a condition I have that causes my heart to beat irregularly and lowers my blood pressure to a dangerous low which leaves me feeling sick, dizzy, nauseous, tired and sometimes with a blaring headache.
The coconut water helped me greatly when I was having low blood pressure. I noticed that just a few minutes after drinking a 10 ounce glass, my blood pressure went up to a normal reading and my heart started beating normally. But what really surprised me is that when I weighed myself, just 2 weeks after I started drinking high amounts of coconut water, I had lost 6 pounds which was not part of my plan. I must say that I did not diet, exercise or do anything to lose this weight during these two weeks. I could not exercise in any way due to monitoring of my heart and blood pressure. The only thing I had done differently was my consumption of coconut water.
After thinking about my weight loss it made perfect sense, here’s why:
- Research has shown that coconut water increases your metabolic rate – Coconut water is a great way to keep you hydrated, and if you are hydrated, you are less likely to store fat in your body to help raise your body temperature. Your body temperature drops a little bit if you are dehydrated. During dehydration, your metabolism is affected negatively in this way. Fighting off this weight increase that you would experience from being dehydrated is one reason why drinking pure coconut water helps you shed pounds.
- Coconut water is said to act as a natural diuretic
- Coconut water has absolutely no cholesterol, so drinking more coconut water in place of beverages that have cholesterol is an automatic inducer of weight loss. Fat-wise, coconut water contains less fat that even milk, which means you stand to gain less weight or even lose weight than if you continue drinking milk. In comparison to other popular drinks like orange juice, for instance, coconut water comes with fewer calories, meaning that if you substitute coconut water for orange juice, assuming you drink significant amounts of orange juice, you ought to shed some pounds.
So all in all if you drink coconut water, you can’t go wrong. Coconut water boasts all of these amazing benefits and it tastes great. It’s also loaded with calcium, potassium, magnesium, sodium and natural sugar.
If you live near a coconut tree you can have an ample supply of free coconut water which is a plus. The best form of coconut water is from a freshly cut young green coconut. You can also make coconut kefir, a fermented drink that is beneficial to those suffering from gut problems such as candida overgrowth and other digestive issues. Personally I have enjoyed coconut water since I was a child. My dad often got them from neighboring trees or purchased them at a local market. Organic Vegan Raw “So Delicious” Chocolate Mousse and its Gluten Free!

I love raw, organic, vegan and healthy desserts. But I have to be conscious that we have one little person in our home that has Celiac disease so mommy set out to make a super delicious nutritious dessert that would meet the needs of all people. Plus, I just entered Jillian’s recipe contest, www.jillianmichaels.com/sodeliciousrecipes with this recipe. I hope you enjoy it and I win, lol.
This is what I used but you can alter ingredients as you like. Just make it fun and experiment with the ingredients.
LCO’s Vegan Organic Mousse
1/4 cup of organic raw cacao
10 pitted organic dates
3 spoons of organic coconut palm nectar
1 tablespoon of organic extra virgin coconut oil
a pinch of organic vanilla
1/2 cup or more of So Delicious Organic Coconut milk Original
1/4 cup of So Delicious Cultured Coconut Milk Original
1/4 cup of shredded organic coconut
1/4 cup of your favorite raw organic nuts & seeds (optional)
organic cut strawberries (optional for garnish)
Blend everything together until smooth and creamy. It will be thick and will most likely need to be scooped out.
Scoop out into drops on wax paper and top with shredded coconut or strawberries.
Freeze for 45 minutes to 2 hours and enjoy! Left overs can be kept in the fridge for 2 days or in the freezer.

I am working on a article about Autism and how there is a tremendous link between gut health and autism. Here is a great way to increase the good flora in your digestive track and its something you can make at home in minutes.
Many of the longest-lived societies included cultured foods in their diets because of the amazing benefits. Most authorities agree that the ancient people of the Middle East ate yogurt regularly. Written records confirm that the conquering armies of Genghis Khan lived on this food.
The benefits of friendly bacteria first came to the attention of the general public in 1908, when Dr. Elie Metchnikoff, a Russian biologist, wrote The Prolongation of Life. Dr. Metchnikoff devoted the last 10 years of his life to the study of consuming lactic-acid-producing bacteria as a means of increasing life span. After much research, he was convinced that he had discovered why so many Bulgarians lived noticeably long lives. This phenomenon, he theorized, was due to their consumption of large quantities of cultured foods, especially yogurt, which he believed help maintain the friendly bacteria that live in the gastrointestinal tract.
So it’s very important that we include cultured foods into our diet on a daily basis, especially if there is digestive issues.
Cultured Coconut Kefir:
- What moist and fresh young coconuts look like.
Examples of old, moldy coconuts: The water inside may still be fine to ferment (see picture on page 2).- Lay young coconut on its side and cut several thin slices from the bottom.
A circle appears (often white, sometimes a brown ring). This indicates the soft spot or way into the sterile, sweet coconut water.
Sometimes a hard knot makes it more difficult to cut through the coconut. Usually the hole is in or beside this knot.
Poke down through soft spot, creating a hole in the coconut shell.- Setting the coconut down into a sink, so “cone-shaped” head nestles firmly into drain makes this easier. Widen
the hole with a carrot peeler, so water can pour out.
Each coconut contains 1½ cups of liquid. Open 3-4 coconuts to obtain 1½ quarts.
If the water is pink, do not use it (water on the right is spoiled, and so is the coconut).
Pour Coconut Water through strainer into sauce pan. Ideally, Microflora prefer that the liquid be 92° F (31° or 32° degrees C), so be careful not to overheat.
Use an inexpensive thermometer if desired, to check the temperature.- Or wash your hands well and dipping your finger into the coconut water, test for the right temperature. At 92 , you won’t
feel hot or cold. It will be a neutral feeling or “natural feeling”.
Add Body

Ecology’s culture starter to the heated coconut water. The culture
starter contains plantarum, an antiviral bacteria, and the kefir starter
contains lactobacillus and beneficial yeast.
Put lid onto glass container and shake well!!- Ideally the room temperature should be around 70°F to 75° F). If your room is colder you may want to place glass
container into insulated storage. Kefir is ready in 36 hours (may vary with temperature).
Once fermented, coconut water will become cloudy and lighter in color (see picture towards the bottom. The left jar is fermented, the right one is not).(After fermentation is complete, you will want to refrigerate your kefir to extend its life. It should maintain its
fresh flavor for about 3 weeks.)- Now you can enjoy in smoothies or drink it alone.

Gluten Free Organic Creamy Corn & Coconut Cakes

I love making all sorts of pancakes, both sweet and salty. But now that my son has Celieac Disease I started messing around in the kitchen and came up with a pretty nice recipe for some yummy gluten free cakes that the entire family can enjoy. Plus you can serve them sweet or salty which in our case means they will either be for breakfast or dinner.
So without further adue, here’s to the gluten free people in your life, this recipe is sure to make you lick your lips and want seconds.
What you’ll need if you’re making these salty:
1 cup of organic frozen or fresh sweet corn kernels
2 tablespoons of organic chia seeds
1 heaping tbsp of organic extra virgin coconut oil, Melted (not in the microwave just leave out on window sill or in a warm place)
2 tsp of organic coconut cream or organic coconut mana
½ cup of organic coconut flour
¼ cup of organic corn meal
1/2 tsp organic gray sea salt or regular sea salt
1/4 cups of organic chives chopped
1/4 tsp black pepper
First take your chia seeds and soak them in ¾ cup of water for about 5 to 10 minutes until a gel forms. I found that this makes a great egg substitute. Of course if you want to use eggs you can omit the chia seeds.
Blend all your ingredients including chia seed gel in your blender or food processor. In a pan or flat grill place a teaspoon of coconut oil, melt at medium heat and scoop out spoonfuls of the mixture leaving about 1 inch of space between each scoop. Flatten then with gentle care and cook until golden and then flip to do the other side.
Once they are ready you can cut them open and make a grilled cheese with them or serve with cream cheese, sour cream, meatloaf, nut salad, sautéed vegetables or whatever you like.
To make these sweet follow the same recipe above but omit the chives, pepper and salt. Instead use ¼ cup of finely chopped nuts or seeds, 3 tablespoons of organic coconut sugar, ½ tsp of organic vanilla extract and a pinch of organic nutmeg.
Prepare as mentioned above and serve with chopped bananas and organic strawberries or with organic almond butter and raw honey!!

Have you ever made organic brown rice and had some left over in the fridge for a day or two and not know what to do with it. Or maybe you’re sitting at home right now, on your couch, laptop on your lap and you’re wishing you had something sweet. Either way here is a great cheap and quick recipe you can make and enjoy time and time again. Its one of my favorites. 
You’ll need:
1 1/2 cups cooked organic brown rice
1 cup organic coconut milk
1/2 cup organic almond or raw milk
3 tablespoons shredded dried organic coconut
1/3 cup organic maple syrup
1/4 cup organic raisins
1/8 teaspoon organic cinnamon
1/4 cup chopped raw almonds or other favorite chopped nut
1. Combine all your ingredients (except nuts) in a pot and cook over medium heat for 10 minutes, or until creamy.
2. Top off with roasted almonds.
3. Best served warm, you can add some raw whipped cream if your into raw cream!
