Gluten Free Organic Creamy Corn & Coconut Cakes

I love making all sorts of pancakes, both sweet and salty. But now that my son has Celieac Disease I started messing around in the kitchen and came up with a pretty nice recipe for some yummy gluten free cakes that the entire family can enjoy. Plus you can serve them sweet or salty which in our case means they will either be for breakfast or dinner.
So without further adue, here’s to the gluten free people in your life, this recipe is sure to make you lick your lips and want seconds.
What you’ll need if you’re making these salty:
1 cup of organic frozen or fresh sweet corn kernels
2 tablespoons of organic chia seeds
1 heaping tbsp of organic extra virgin coconut oil, Melted (not in the microwave just leave out on window sill or in a warm place)
2 tsp of organic coconut cream or organic coconut mana
½ cup of organic coconut flour
¼ cup of organic corn meal
1/2 tsp organic gray sea salt or regular sea salt
1/4 cups of organic chives chopped
1/4 tsp black pepper
First take your chia seeds and soak them in ¾ cup of water for about 5 to 10 minutes until a gel forms. I found that this makes a great egg substitute. Of course if you want to use eggs you can omit the chia seeds.
Blend all your ingredients including chia seed gel in your blender or food processor. In a pan or flat grill place a teaspoon of coconut oil, melt at medium heat and scoop out spoonfuls of the mixture leaving about 1 inch of space between each scoop. Flatten then with gentle care and cook until golden and then flip to do the other side.
Once they are ready you can cut them open and make a grilled cheese with them or serve with cream cheese, sour cream, meatloaf, nut salad, sautéed vegetables or whatever you like.
To make these sweet follow the same recipe above but omit the chives, pepper and salt. Instead use ¼ cup of finely chopped nuts or seeds, 3 tablespoons of organic coconut sugar, ½ tsp of organic vanilla extract and a pinch of organic nutmeg.
Prepare as mentioned above and serve with chopped bananas and organic strawberries or with organic almond butter and raw honey!!

I have been writing about coconut oil for a long time. We have used organic raw extra virgin coconut oil for everything from chicken, to beauty treatments and in smoothies. I have also witnessed its amazing qualities for sustained weight loss. But now the medical community is finally jumping on the bandwagon and talking about it benefits, something the natural health community has known for years. But it’s never to late!

If you’re anything like me, you prefer the basic facts highlighted for you in bullet point fashion ~ everything important you need to know about the naturally occurring health benefits of coconut tree products. So, I’ll get right to it!
- Helps Prevent Obesity by speeding up metabolism, providing an immediate source of energy with fewer calories than other fats. People who consistently use coconut products, report a stronger ability to go without eating for several hours with no affects of hypoglycemia.

Coconut Curry Chicken – I cook the chicken in coconut milk, coconut oil, curry and garlic. Brown the chicken first using a tablespoon of coconut oil then lower and simmer in coconut milk, curry and garlic. You can add another spoon of coconut oil if you like. Pina Colada Smoothie – We use frozen pineapples, bananas, raw milk or coconut milk, organic raw honey and a teaspoon of coconut oil per 4 cups of fluid. Blend and you have your self a delicious smoothie.
Raw chocolate Chip pancakes – You can use sprouted grains or regular organic flour and add in your carob or cacao chips. Use coconut oil as needed. Place on the electric skillet or in oven making sure not to heat above 118 degrees.

Organic Vegan Raw Homemade Chocolate Mousse

If you love chocolate you have to hear my audio post below. I apologize in advance for sounding a bit scatter brained but I was rocking my little one back and forth so he would not start screaming.
Once you hear the audio post then look for the recipe below.
This is what I used but you can alter ingredients as you like. Just make it fun and experiment with the ingredients.
LCO’s Vegan Organic Mousse™
1/4 cup of organic raw cacao
10 pitted organic dates
3 spoons of organic coconut palm nectar
1 tablespoon of organic extra virgin coconut oil
a pinch of organic vanilla
1/2 cup or more of So Delicious Organic Coconut milk
1/4 cup of So Delicious Cultured Coconut Milk
1/4 cup of shredded organic coconut
1/4 cup of your favorite raw organic nuts & seeds (optional)
organic cut strawberries (optional for garnish)
Blend everything together but leave a few teaspoons of coconut for the end.
Scoop out into drops on wax paper and top with shredded coconut.
Refrigerate for 45 minutes to a few hrs and enjoy within 2 days

Green smoothies are an awesome way to get all the vital nutrients, enzymes and fiber that your body needs. Here are some more awesome smoothie recipes that we (baby, older kids mom and dad) enjoy regularly.
LCO’s Boost a Brain™ Smoothie
Ever felt like your brain needs a boost to help you remember important things and stay focused? Here is a good smoothie for you that we have made in the past.
1 Organic apple with skin
1 organic cucumber with peel
1 lime, juiced
1 and ½ ripe pears with skin
2 cups of fresh purslane also known as Verdolaga, Pigweed, Little Hogweed or Pusley
2 cups of cold water
Salad to Go Smoothie
1 cup of frozen mango
7 organic mint leaves
1 cup organic romaine lettuce
10 organic spinach leaves
1 cup of water
Hulk in a Cup™ Smoothie
1 tsp of Amazing Grass greens or 1tsp of powdered wheatgrass
1 cup spinach
½ cup organic alfalfa or clover sprouts
½ organic cucumber with peel
1 cup of frozen mango
½ tsp organic raw coconut oil
1 banana
2 cups of water
Hope you enjoy these smoothies. They really taste great especially for beginners. If you find that you need a bit of sweetener try some pure Coconut Sugar which will not alter sugar levels and it’s a great low-calorie option.

How to Make Organic Coconut Cilantro Citrus Chicken

And let me tell you, its ridiculously delicious and simple to make. I am about to share with you one of my signature recipes that I prepare and make available for friends and family that enjoy cooking. It’s a La Chica Organica Exclusive that I know you will enjoy.
You will need:
2 pounds Organic Chicken Thighs and Breasts
Pure Sea Salt to taste or 1 teaspoon
6 ounces Organic Unrefined Extra Virgin Coconut Oil
2 medium size sweet onions chopped
4 ounces of fresh cilantro (whole, with leaves on stem) or about 30 stems
Juice from 1 sour orange or 2 limes
Large baking dish
Ok so now that you have all your supplies, start by cleaning your chicken and be sure to remove the fatty skin. Once cleaned set aside. An option is to blend 2 cups of distilled water with a small piece of ginger and add 2 tablespoons of vinegar then let the chicken sit soaking for about 10 minutes, then rinse.
In a blender; mix the coconut oil, salt, sour orange and cilantro and blendy blendy in your blender until its nice and smooth or you can leave it with chunks if you’re the chunky type
Then pour the blend into a glass jar.
Place your chicken in the baking pan and pour about 3 to 5 table spoons of the mixture on your chicken and add in the chopped sweet onions. Mix and distribute oil and onions equally. Cover and place in the oven at 350 degrees for 1 hour then uncover and bake for another 30 minutes or until desired texture is achieved.
Enjoy with organic brown jasmine rice, quinoa, or lightly seared vegetables.
Don’t forget to refrigerate your coconut oil mixture. Don’t worry, when you see it turn hard like butter, this is normal. When ready to use just scoop out the spoons needed.
