I’m Crazy Because I Eat Healthy and I Want to Help Others Eat Healthy Too!

LCO Green Fruit Smoothie
You know I have heard this so many times its not even funny anymore.  People who don’t value or understand the benefits of eating healthy seem to criticize those around them who eat to live.

Eating to live is a fascinating concept where the human body desires to eat those things that are going to enhance its ability to fight off disease and ultimately live a more productive life.

Those of us who have chosen to change our diets have not done so because we are self righteous schmucks who think we are better than the rest of you! No.
It’s because we have seen first hand the benefits of eating healthier.  Some of us have survived cancer; others have been healed from asthma, arthritis, IBS and many other diseases.  We know that when we eat better, we feel better.  We understand that the investment we make up front keeps us healthier in the long run and equates to less money spent on hospital visits and prescription drugs.

The silliest thing I hear over and over again is: “I don’t eat organic or healthy foods because it’s too expensive.”
Come on now, really?  My answer to this question is yes, its expensive you are right.  It’s expensive when you fill your body with sodas, processed foods and cancer causing additives and you end up paying hundreds or thousands of dollars in medical bills for a diagnosis of cancer or diabetes.  Yes that is very expensive.

It’s not expensive however to eat organic vegetables, fruits, legumes, sprouted grains, raw nuts, fermented foods and leafy greens.
And if you’re a meat eater, if you shop correctly you can find quality grass-fed beef for about $2 a pound over what the regular antibiotic, hormone and steroids filled meat costs.

When you do the math it’s much more costly to eat junk.  Why?  Well because your body slowly starts to break down.  Cells begin to oxidize, muscles begin to weaken.  Sugar levels begin to change, bad cholesterol levels raise and the list goes on and on.
When a person who eats unhealthy gets sick, they take longer to recuperate then someone who incorporates herbs and healthy organic foods into their diet.  Not only do they take longer to recuperate but they also miss more time from work which means loss of income that in most cases amounts for much more than the cost of healthier food purchases.

This does not mean that a person who has a compromised immune system due to medical treatments or has suffered contamination from mold, mercury or suffers from an autoimmune disease, will bounce back immediately if they eat a healthy assortment of foods.  In these cases, the body goes through a longer process of cleansing and restructuring of cells so that the gut and immune system can function properly.  A person, who was exposed to high levels of lead or mercury for example and has a weakened immune system, will take longer to heal but they will heal eventually if they are on the right treatment plan.

The point I want to make is that eating healthier and eating organic is a life choice, it’s a decision to be pro life, to want to see our children and family members live healthier lives and be able to do more on this earth.  Most of you who know me, know that I have a deep faith in God and I truly believe that when the earth was created, he placed everything we would need in nature.
When we use all that God created for our benefit we can do more for others, we can accomplish more in our jobs and fulfill the purpose we were each placed on this earth to live out.

It’s not easy to make any long term changes in life.  We are stubborn and selfish by nature and we want to gratify all the desires of our heart right here and right now.  Sometimes our biggest enemy is our own heart and mind.  So changing the way we eat or treat our bodies will take time but it is possible by taking one baby step at a time.

Simple things like cutting out soda are a great start to eating healthier.  Then week by week you cut out more junk food and add in more life building foods.  Life building foods consist of all the vitamins, minerals, enzymes, fiber and antioxidants our bodies need to survive.  Once you make a few changes you might feel miserable because your body is going to crave the junk.  But after a few days this usually passes and you can move on to cutting out your next unhealthy food.

Here are a few quick ideas you can use in your kitchen to jump start your journey to a healthier you:

3/4 cup of raw spinach in a banana smoothie

1 tbs of chia seeds in a bowl of oatmeal

1 cup of Quinoa in soup or stews

1 teaspoon of extra virgin coconut oil in warm tea

Kefir or Kombucha mixed in with a 1 tsp of raw honey

Sprouted grain bread for daily sandwiches

Crushed garlic and extra virgin olive oil on mashed sweet potatoes

Raw soups with uncooked kale, spinach, leeks and coconut oil plus 1 or 2 cooked sweet potatoes.  Cook potatoes first then blend with raw foods and coconut oil and enjoy.

Hummus Salad – make your own hummus using chic peas, extra virgin olive oil, lemon juice, garlic, salt and pepper. Blend in the blender or food processor and store for up to a week in the fridge. Then scoop on top of salads for protein and fiber.

That’s all for now folks.
God bless you and yours.
